Anti-inflammatory sweet potato, ginger & coconut soup

Sometimes all we need is simple comfort food to warm our body, mind and soul. This sweet potato, ginger & coconut soup is delicious and super exotic, plus it is rich in anti-inflammatory properties. Perfect for the flu months and so easy to make.

Sweet potatoes are a great source of low GI carbohydrates and fiber (twice the fiber of white potatoes), witch help us regulate our blood sugar levels and makes us full for longer. They are also rich in Vitamin A and beta-carotene, promoting a beautiful and glowing skin, and contain anti-inflammatory and antioxidant properties. Ginger is a powerful anti-inflammatory too and helps with nutrient absorption and assimilation. These two ingredients just make the perfect combination and to make this soup even more delicious and creamy I use coconut milk!

Here is the recipe. Hope you love it!

Ingredients:

  • 4 medium sweet potatoes
  • Water (around 1.3l)
  • Half can of coconut milk
  • Big knob of ginger
  • Salt & pepper to taste

Method:

  1. Peel & cut the sweet potatoes and boil them until they become really soft
  2. Mix them in a blender with the water, coconut milk, ginger and salt & pepper!
  3. Serve with sprinkle of herbs and seeds! Enjoy!
