Avocados are one of my favorite foods on hearth and one I couldn’t live without. They are the perfect beauty food full of antioxidants that make our skin glow from the inside out. Avocados also contain fiber, vitamins A, C, E and K and are one of the best sources of healthy plant fats.
This delicious and super nutritious food also makes the perfect pesto! Serve it with gluten free pasta and cooked veggies for a comfort meal or with zucchini pasta and cherry tomatoes for a lighter option. Here is the recipe:
- 1 ripe avocado
- 1 big handful of basil leaves
- 1 handful of Brazil nuts
- 4 tbsp of cold pressed olive oil
- ½ lemon juice
- Salt & peper to taste
- Mix everything into a food processor or high speed blender and blend until creamy and delicious
- Serve over your gluten free pasta or zucchini pasta!
